12/28 Meals for the Week

Happy Sunday!  I'm looking forward to the short work week and getting back into the kitchen. Meal planning has been non-existent in this house for the past week or so.  As I've mentioned in previous posts, we are currently in the process of renovating our kitchen with new appliances, countertops, paint and some good old fashioned TLC.  We decided to sell our appliances for a little extra cash and sold our oven on craigslist quicker than expected, meaning we've been ovenless for 2 weeks.  Our new appliances came on Saturday and I'm so excited.  I'll share a sneak peak and a full before and after once the project is completed.... a little blurry, but awfully shiny!

We ate with wild abandon last week - takeout, chocolate, you name it and we probably ate it.  My jeans are feeling a little tight, so I'm happy to have my kitchen back.  The holiday season continues this week with New Years Eve and the start of 2015!  We're having dinner with three other couples and then, more likely than not, we will be watching the ball drop in our pjs.  My husband and I have a tradition of going to hibachi every year on NYE, so I'm looking forward to continuing the celebration.  I've been doing a lot of reflecting on what I'm hoping to accomplish in 2015... so I can't wait for it to get here!

Now, onto the meals!  You can see that I've stuck with my tradition of using the same meal twice for Thursday and Friday.  I love cooking chicken in the slow cooker and shredding it for use in multiple meals.  Do you have any meals that are double duty?  Feel free to share them in the comments below!

Sunday: Black bean tortilla soup
Monday: Chicken tacos 
Tuesday: Leftovers!
Wednesday: Wild Ginger Hibachi - NYE celebration!
Thursday: Slow cooker buffalo chicken, brussels sprouts, oven baked sweet potato fries
Friday: Buffalo chicken pizza - using slow cooker buffalo chicken 
Saturday: Nada - my friend Christina's 30th birthday extravaganza!
