Shrimp for the shrimp!

Hi there!  I hope your week is going well :)  Even though it's halfway to Friday, I'm ready for the weekend already - pumpkin carving with my BFF, wedding dress shopping!! the Bengals game and Monday off of work?!  What more could a girl ask for.

I love seafood, I order it at restaurants almost all of the time, chicken is good but seafood is great, at least in my eyes.  I'm the chef in my home, obviously, and my fiance is not a seafood person - typical boy.  So anyway, what happens when your seafood hating man leaves and goes away for work?  You cuddle up on the couch with blankets, How I Met Your Mother and this delicious and ridiculously easy recipe.  I bought frozen, wild caught shrimp and thawed them overnight in the fridge.  I served mine over quinoa with plenty of broccoli on the side.  Enjoy!

Shrimp Scampi


10-12 large shrimp, tails removed & deveined
2 tbsp olive oil
2-3 tsp minced garlic
1 tbsp white wine
1 tbsp lemon juice

1. Heat small pan over medium heat, add olive oil.
2. Add shrimp and garlic to pan, cook shrimp for 1 minute on first side then flip and cook for 2 minutes on the second side.
3. Remove shrimp from pan, add white wine and lemon juice until sauce forms.
4. Pour sauce over shrimp and serve.
