A Better Breakfast

Hi there!  When it comes to breakfast, I'm always trying to think up quick and easy options.  I commute about an hour to and from work, which means I'm always eating breakfast at my desk.  I pack everything the night before, so I need portable and healthy options.

When it comes to breakfast and basically every other meal that I pack, it's easy for me to get trapped in a rut.  Do you ever feel that way?  My breakfast of choice lately has been an egg and cheese sandwich that I prep ahead of time and then re-heat in the microwave...but sometimes it gets kind of old!

Since the start of September is here, fall is right around the corner and I'm ready to reunite with some cold winter favorites like oatmeal.  However, oats in the microwave always explode and now that the mornings are darker, overnight oats just won't cut it.

So, instead we have oven baked oatmeal!  Oats are combined with applesauce, vanilla and the milk of your choice, then they are baked in individual glass serving dishes for a breakfast that's easy and portable.  Feel free to top with almond butter, dark chocolate chips, flaxseed or coconut... the possibilities are endless!

Perfectly Portioned Oven Baked Oatmeal

2 cups rolled oats
1 tsp baking powder
1 tbsp sugar
1 egg, beaten
1 tbsp vanilla
11/2 cups milk
3/4 cup applesauce

1.  Preheat oven to 350. Combine first three ingredients in a large mixing bowl, stir until combined.
2. Add egg, vanilla, milk and applesauce. Stir until combined.
3. Divide equally among 5 oven-proof glass containers or an 8x8 baking pan sprayed with nonstick spray. Bake for 25 minutes or until golden brown.

Wednesday, Thursday & Friday lined up in the back of the fridge!

All packed and ready with my other meals for the day!
