Quick & Easy Black Bean Burrito

Hi there! Hope your Monday is off to a great start :)  Even though I love to cook, sometimes life is too busy to spend all night (or even 30 minutes) in the kitchen.  There are emails to answer, laundry to do, cleaning to take care of and workouts to get to, just to name a few.  It's way to easy to pick up the phone and order something, which more often than not tends to be something unhealthy, especially if it's been a rather stressful day.  It's better on your waistline (and wallet!) to make something from home, but sometimes it's hard to come up with quick and healthy creations when you feel completely drained.  

So, let me help you out!  My newest creation combines a few of my favorite things - brown rice tortillas, brown rice, black beans and avocado.  It's full of fiber and healthy fats :)  Feel free to leave out the cheese to cut saturated fat or substitute with vegan cheese.  Serve with a simple salad on the side to round out your meal.  Now friends, run to your kitchen and make this so that you can feast away!



Black Bean Burrito

Ingredients

1 brown rice tortilla
1 slice low-fat cheese
1/4 cup cooked brown rice
1/4 cup cooked black beans
2 tbsp salsa
1-2 tbsp avocado, chopped

1. Heat tortilla between two wet paper towels for 35 seconds in a microwave on full power.
2. Layer ingredients into the bottom half of the tortilla, fold in both of the sides.
3. Working from the bottom, roll the tortilla up into a burrito.
4. Place back in the microwave for 30-45 seconds to melt the cheese.
