Whatever Wednesday

Oh hey there friends, happy hump day!  Does anyone else love Wednesday as much as I do?  We're so close to the weekend - which is a long weekend for most of you!  Not for me though :)  I adore my job....but I also adore the weekend too.  This week has just flown by, not that I'm complaining.  Next stop on my list for the week - 3 more workouts, making at least 2 new recipes, drinking copious amounts of coffee, spending as much time as I can outside on my lunch hour and getting a little bit more sleep.  Oh yeah and I wanna make these, cause Dreena Burton is my dessert hero.  Today, I'm going to share something that's awesome. I got inspired when I saw these cheese quinoa cakes on Spoon Fork Bacon then I basically adapted everything and changed proportions to make them mine, they kind of remind me of my potato pancakes but with quinoa! 

So, moving on, I must admit that today was kind of an off day for me.  Does anyone else have those?  Everything went really well, I just felt....off.  Apparently, I wasn't alone in feeling this way since one of my friends said she was "completely over today" and I couldn't agree more.  Anyway, on my commute home I stopped to pick up new sunglasses... sigh, I was looking for aviators but I just can't find cute ones.  Any suggestions on where to pick up a cute pair?  Fossil maybe?  After I came home,  I was tired and a little cranky, so I decided to skip my workout (there is seriously no point in going to Pure Barre when you aren't motivated), drink a La Croix, paint my nails, watch The Bachelorette and make this amazing recipe that I'm about to share with you. Whatever Wednesday, I'm over you. Bring on the weekend, oh yeah and get to your kitchen and make this now!

Quinoa Cheese Cakes 

Ingredients

1 cup quinoa, uncooked
1/2 cup parmesan cheese
1 cup 2% cheddar cheese
1/4 cup brown rice flour
4 eggs
1/2 cup green onions, chopped
1/2 tsp red pepper flakes
black pepper & sea salt to taste
1/4 cup grapeseed oil

1. Prepare quinoa according to package directions - or cheat and use a rice cooker.  Set aside to cool.
2. Next, combine quinoa, cheeses and brown rice flour in a large bowl.  Beat eggs, add to quinoa cheese mixture.
3. Stir in chopped onions, red pepper flakes, sea salt and black pepper until combined.
4. In a medium saucepan, heat 2 tbsp of grapeseed oil over medium high heat.  Pack quinoa mixture into 1/4 cup measuring cup, place in saucepan and flatten into rounds.  Halfway through the batter, add the remaining grapeseed oil to the pan.  Continue to add the quinoa cakes in 1/4 cup increments until no batter remains. 
5. Cook each side until golden brown.  Feast :) Top with fat- free sour cream or greek yogurt and more green onions.

Whatever Wednesday Eats

So, I started off the day the way I always do - coffee + unsweetened almond milk - because let's get real, I always need coffee at 6:00 am.  I have a Tassimo that I worship and it's perfect for mornings when I don't have time to brew a whole big batch...


Next up, my favorite breakfast... a gluten-free multigrain English muffin, topped with muenster cheese and an egg...oh and raspberries which I ate at my desk at work while I worked on screening patients for the day.


Anddd I totally forgot to take a picture of my lunch.  Sorry, but in my defense I was outside, without my iphone on a beautiful May day and had been seeing patients all morning.  Can you blame me for not wanting to walk all the back inside with my food?  Next week, I'll try harder to remember :)  I tried to re-create in the comfort of my own kitchen.... 2 slices of gluten-free pizza topped with spinach, black olives and tomatoes with a side of baby carrots - err except the slice in this picture looks itty bitty but I swear they weren't.



Now, onto snack one of the afternoon.  Gluten-free pretzels, sunflower seeds and a few random chocolate chips.  


After driving for 50 minutes and walking around the store looking for new sunglasses, I was hungry so I broke out my apple and paired it with a string cheese.  One of my all time favorite snacks for sure.


Next up was dinner.... I made this incredible quinoa cakes, paired them with a side of broccoli and fat-free sour cream.

When Life Happens

Hi there!  If you're a regular around these parts, you've probably been wondering if I'll ever be returning to the blogsphere.  Of course the answer is yes :)  The bigger question at hold is where have I been?  The easiest answer that I can provide you with, is that sometimes when life happens, blogging doesn't happen.  Haven't you ever noticed blogs that you loved suddenly go under when a major life event happens? A wedding, a baby, a move, a graduation.... and as the reader your left feeling kind of sad.  I never understood why someone who loved to blog would just stop, but I have to say that I do understand (and no, I'm not leaving).

I started my blog mostly for myself - to be able to look back and say "OH! That's where I was then," but I also started it to share my recipes with the world.  I noticed as I blogged during graduate school, that whenever my life picked up and got busy, my blog slowed down.  For me personally, it's always been an issue of balance - having time to eat a healthy diet (and cook one!), sleep enough, exercise enough and spend enough time with my family and friends.  The question is, what is enough? How does blogging fit in there?

In my case, I started a new job as a clinical dietitian which I truly adore.  I learn so much everyday and I love the staff at my hospital - everyone is so kind.  I love that I get to work with people and that I'm able to educate them on how to follow a healthy diet.  It's been incredible.  However, I do end up driving 45 minutes in each direction to my job (which I don't mind - it's relaxing and I like having that much time with my own thoughts) but by the time I get home, it's time to work out and do 8,000 other things.  The evenings have left me little time for coming up with new recipes :(  In the beginning, I really struggled with maintaining a good work/life balance, but I feel like now I'm starting to figure it all out.

What does that mean?  Well, for one, I missed blogging and I've started to think of ways in which I'll incorporate it in.  This will probably mean more planned posts on the weekend and less posts during the week...then I'll kind of go from there. 

Since you're probably dying for a recipe, I strongly encourage you to make this Mozzarella, Tomato & Basil Risotto from Cooking Light.

I fully encourage using 8 oz mozzarella :)


Now, I'm off to pure barre, the bank, the car wash, the tailor, goodwill, maybe the shoe repair shop....and later the zoo :)  See you soon, but not too soon :)
