Lazy Girl Pasta

Hi friends! I hope you're having a terrific Sunday.  Mine has been pretty low key - it's included brunch at this awesome restaurant that serves only locally grown organic food, followed by lots of laundry and now lounging around and preparing for the class I teach on Monday evenings.  I'm disappointed that Pan Am and Once Upon a Time aren't on tonight!!! Whatever am I going to do with myself.  Probably make a new pasta recipe... because well....

Sometimes, a girl just needs pasta.... but sometimes a girl is just way too lazy to spend tons of time on dinner.  So, a few weeks ago, I threw together this completely random combination of ingredients and ended up with one of the best pasta dishes I've ever made.

To start, I decided to try this new to me pasta by Mrs. Leepers that I picked up at the grocery store.  I loved how the pasta was colored using various vegetables and it added tons of color to this pasta dish.



Lazy Girl Pasta

Ingredients

1 cup gluten free pasta of your choice
1/4 cup prepared pesto
1/2 cup shelled edamame (frozen)
1/2 cup baby bella mushrooms

1. Boil the pasta according to package ingredients.  Meanwhile, saute the mushrooms in a pan sprayed with olive oil spray over medium heat about 5-7 minutes.
2. During the last minute of cooking time, add frozen edamame to boiling pasta.
3. Drain pasta & edamame.  Combine with pesto and bella mushrooms.
