C is for Cookie

Happy Tuesday everyone!  I hope that by now your week is off to a fabulous start.  I'm loving the fall weather and looking forward to the months ahead :)  Lately, I've been saying that I want a cookie literally everyday.  Really?  I'm too lazy to make an entire batch though and I wanted a quick and easy gluten-free cookie that didn't come out of a box.  So I've been putting off the cookie baking.  Then I had a thought... what if I made a small batch of cookies and froze most of them.... then if I wanted a cookie, I could just pull one out of the freezer, easy peasy style.  I wanted them to be a decent size, but not a monster size.  This continued for a few days but today I had the grand realization that I had these in the refrigerator...


So, of course this had to happen....


Sunflower Seed Cookies

Ingredients

1/4 C Smart Balance Omega-3 Blend, softened
1/2 cup brown sugar
1 egg
 2 tsp vanilla
1-1/2 cups Pamela's Baking & Pancake Mix 

1/4 cup mini chocolate chips
1/4 cup candy coated sunflower seeds (if you don't have these, you could sub M&M's)

1. Preheat oven to 350 degrees. Cream together Smart Balance & brown sugar - I used a hand mixer, but feel free to use a stand!
2. Add egg and vanilla to creamed mixture, combine.
3. Add in baking mix, combine.
4. Add in chocolate chips and candy coated sunflower seeds!
5. Drop tablespoon fulls of dough onto a baking sheet lined with parchment paper. Bake for 8-9 minutes.  Enjoy!
