When Fails Become Successes

TGIF everyone!!  I hope everyone is ready for the weekend - I know that I certainly am.  

So today I realized, that I didn't really have anything in my house to eat for breakfast.  Well, that's kind of a lie, but nothing I felt like eating.  Seriously, who doesn't have those days? I wanted pancakes, but I'm lazy and didn't want more than one... but I'm out of my favorite mix.  Then I noticed the box of gluten-free bisquick I bought on a whim (really?! wth) and decided I could do something with that.  I noticed the waffle recipe on the back of the box and plugged in my seemed promising enough..

Then disaster struck when I was pouring the almond milk.. I only had 1/2 a cup... I needed 1 1/4 cup.  So I decided to improvise - the batter did not look promising.... but I was happily surprised.  Yay!

Chocolate Chip Waffles


1/2 cup gluten free bisquick
1/2 cup vanilla almond milk
1 tbsp vegetable oil
1 egg white
1 tbsp chocolate chips

1.  Combine bisquick, almond milk, vegetable oil and the egg white in a bowl.  Plug in your waffle iron and heat according to manufactures directions. 
2.  Add chocolate chips and pour batter into waffle iron.
3.  Let cook about 3-5 minutes depending on your iron.
4. Feast!
