Sometimes You Need a Cookie

TGIF!!!!  What better way to celebrate that it's Friday than with a cookie?  Maybe you are like me and  you don't buy cookies... and maybe you are also like me and can't have a homemade batch in the house because you will pretty much eat them all in one sitting.  All I really wanted was a cookie... so what's a girl to do?

Well, what if I tried to make just one?  I mean I did it before last summer, in ramekins, on parchment paper. I tried single-serve brownies and iffy cookies with applesauce... but I just wanted peanut butter and chocolate chips... so.. this is what went down after throwing together a random mix of ingredients in a bowl and praying for the best.


The Sometimes You Need a Cookie, Cookie

Ingredients

2 tbsp gluten-free all purpose flour
1/2 tbsp powdered sugar - I would use brown but I didn't have it :(
1/2 tbsp Smart Balance Light, melted
1/2 tbsp chocolate chips
1/2 tbsp peanut butter
A tiny pinch of baking soda
A tiny pinch of salt

1. Combine dry ingredients, add in melted Smart Balance & peanut butter.
2. Add in chocolate chips - dough will be very crumbly.
3. Mold into a cookie sheet and bake in a 300 degree toaster oven for about 5 or so minutes :)

No eggs - you could totally just eat the dough :)



The verdict?  This cookie was definitely crumbly... but totally delicious!
