Happy Friday!!! TGIF everyone. I'm so happy that it's Friday. Today is going to be a busy busy day with lots of meetings.... but then it's the weekend! Who has big weekend plans? I'm going to see The Help tonight - but unfortunately, I haven't read the book yet... so that will be on my list of things to do :) Has anyone else ever noticed that books are always better than the movie version? My Sister's Keeper, The Time Traveler's Wife, Water for Elephants, The Divine Secrets of the Ya-Ya Sisterhood, Feast of Love and Someone Like You (combined with another one of the author's books to make the awful movie How to Deal)... just to name a few. Sometimes the movie version is one in which they completely change and ruin the ending - I'm looking at you My Sister's Keeper.
Anyway, today's recipe post is for a quick pudding that you can make in a hurry. It's simple, easy and full of healthy fats - did you know chia seeds are full of omega-3 fatty acids? You know now.
Chocolate Chia Seed Pudding
2 tbsp chia seeds
1/4-1/3 cup Silk Chocolate Almond Milk
1/2 cup fresh raspberries
1. Combine chia seeds and almond milk. Set aside to sit in fridge for at least 30 minutes.
2. Top with raspberries.
3. Feast away!
