Bagels for Breakfast

Happy Wednesday!!  Wooo it's halfway until Friday.  It's almost TGIF and all that jazz.  Is anyone else looking forward to the weekend as much as I am?

So, I used to be in love with Bruegger's breakfast sandwiches.  Maybe obsessed would be a better word, seriously.  I used to order an asiago parmesan bagel with egg, muenster cheese and sun-dried tomato spread.. and a hazelnut coffee on the side.  Always on days that I had biochem - and numerous other days after that year was over.  You know, where everybody knows your name and the like.  Clearly, going to Bruegger's is no longer an option and I have yet to make my own asiago parmesan bagels.   So when I want a breakfast sandwich.. what's a girl to do but make this faux version that is absolutely nothing like the original.

Oh, but before you get scared, I promise it's still great!  Throw some berries on the side and boom! you have breakfast.


This Ain't Bruegger's Breakfast Sandwich  

Ingredients

1/2 Udi's Whole Grain Bagel (or a whole)
2 eggs
1 slice cheese of your choice (I used reduced fat colby jack)
salt & pepper to taste


1.  Spray a small bowl with non-stick spray.  Break one egg and one egg white into the bowl.  Mix.  Add salt and pepper to taste.
2.  Cook in the microwave for 30 seconds, change the power level to 5, remix.  Continue to cook on 30 second intervals on a power level of 5.
3.  Layer the egg on top of your bagel half and top with cheese of your choice.
4.  Toast in a toaster oven for about 5 minutes until the cheese is golden.
Into the toaster oven...

Voila!
