Easy Peasy Pasta

Happy Sunday!  I hope everyone is having a great weekend :)  Stay cool - the Midwest has turned into some awful version of a desert, but with unheard of humidity.  Fall..where are you?!

Today, I promised you a recipe for Easy Peasy Pasta sauce - I promise this won't disappoint.  Try tossing it with whole grain pasta or brown rice/quinoa pasta if you're gluten free like me and loads of lightly steamed broccoli for a delicious and quick lunch.  Need whole grain pasta ideas?  Barilla Pasta Plus, Barilla Whole Grain or Ronzoni Smart Taste are all great options.   Swap out different shapes of pasta and load up the veggies..the possibilities are endless.

Easy Peasy Pasta Sauce


3 tbsp Smart Balance Omega-3 Stick Blend
1/4 cup brown rice flour
2 cups skim milk
1/4 cup prepared pesto (homemade if you're feeling extra motivated.  I went with Trader Joe's)

1.  Melt your Smart Balance in a saucepan over medium heat, once melted, sprinkle on the flour.
2.  Combine the mixture together - let cook for about 1-2 minutes.
3. Add skim milk to the flour mixture and continue to stir.  The mixture will thicken (be patient!) 
4.  Once thickened, add your pesto and stir.  Portion your sauce into freezer/refrigerator safe bowls (add your pasta & veggies and save for later meals) or serve immediately.

Note:  This should make between 4-6 servings. 

I portioned this into my small pyrex containers and froze it with brown rice noodles and loads of steamed broccoli.  It was easy to reheat and simply delicious.  Enjoy!
